Answer: Dear Josiah,

You can harvest your sweet potatoes about 4-5 months after planting out the cutting. You will know the crop is ready to harvest when the leaves start to yellow. It is not necessary to dig up the tubers all at once, but it is a good idea to harvest them before the cold weather sets in.
