I have a giant bird of paradise strelitzia nicolai. Can I shape this plant by cutting out the centre core.

I'm worried about killing the plant where what I want to do is to trim the lower leaves/branches and have the top half have a better shape at the top?

You can definitely remove the leaves back to the trunk to shape the appearance of the tree. Best to feed after pruning, try Yates Dynamic Lifter Soil Improver & Plant Fertiliser.
